Well by August we were home in B.C. again. Back in Barriere ...where we consider our second home ..or our base. The Johnson have done so much for us ...so when we park there it's like home. The first night home the sky was so alive ..so don't mind all the evening sky shoots. We rested there for about a week then headed over to the Thompson River close to where my mom and dad live...and spend sometime..as by the pictures you can see the girls really enjoyed themselves. Our next big outing will be going down to the PNE....we will head back up to Barriere from the river ....and down to the coast ....with DJ & Candy & Drew & Keisha & us ...going to meet Samantha who is down there doing her first apprentice in sheet metal at BCIT. ....

Today I am posting this recipe ....I hope you will like it ...

Chicken substitutes beautifully for fattier beef in this wholesome chili. The baked chips add fiber, flavour, and crunch without extra fat.

White Chicken Chili
¾ lb boneless, skinless chicken breast,cubed
1 large onion, chopped
2 cloves of garlic, minced
1 cup chicken broth
2 cans (12oz) navy beans, rinsed and drained
1 tsp ground cumin
½ tsp salt
1/8 tsp ground red pepper
4 cups baked tortilla chips
½ cup shredded reduced-fat extra-sharp Cheddar cheese
1. Heat a large skillet coated with cooking spray over medium heat .
Add the chicken, and cook for 10 minutes , or until no longer pink, stirring frequently.
Remove, and set aside. Recoat the skillet. Add the onion and garlic, and cook for 5
minutes, or until soft.
2. Place the chicken, onion, and garlic in a slow cooker. Add the broth, beans, cumin, salt, and
pepper. Simmer on low for 5 to 6 hours. Serve over the tortilla chips, topped with cheese.



Per serving: 185 calories, 17 grams protein , 23 grams carbs, 4 grams fat, 1 gram saturate fat,
30 mg chol, 4 grams fiber , 678 mg sodium.

Diet exchanges: 0 milk , ½ vegetables, 0 fruit , 1 ½ bread, 1 ½ meat, ½ fat

I love, love, LOVE white chicken chili!!!! My recipe is a little different from yours but not by much. I like to get the chicken from the store that's got some good flavor in it too for some extra tasty goodness in mine. I hope you are doing well!
